Dear Er.Jain,
May I know the need in knowing the water requirement for plaster and brick work ? The question does not point to its purpose.
1. Claculate the cement requirement for 1 sqm for plaster or 1 cum of brick work, after ascertaining the grade of the cement mortar used. ( 1:6 or so). You can refer the text books on Estimating & Costing or CPWD DSR, for finding this. ( http://cpwd.gov.in/Publication/DSR14.pdf   -look at "coefficients for cement consumption" for items at P-399)
2. Now, find out the optimum water cement ratio for the stronger grade of cement mortar used for plastering / brick work ( 0.6 to 0.7) by referring  Para 3 of the attached article. From this, find out the quantity of water required for unit quantity of the item, knowing the cement content.

This is the theoretical method. There can be some thumb rules also for the same, which may be quicker for calculating the same.
